Need help with towing calculation.

Looking to purchase a 2017 apex nano 193BHS, hitch weight 406# UVW 3370. I plan to stay within two hours of home for this season on relatively flat highways. The problem is I have a 2016 dodge caravan sxt with tow package and brake controller. Yellow sticker says ccc 1150# and towing capacity is 3500#. So here's my math; trailer hitch 406+ 380lbs people+ 80 lbs hitch+ 120 lbs stuff = About 1000lbs plus trailer UVW is 3370 and van rating is 3500 so by my math I'm good. What am I missing? I do not plan to tow with water in the tanks or any large items like bikes.  I also plan on removing the third row seats which way an easy 80lbs.
