New to Me 2004 Fun Finder (Any help/advice suggessted upgrades welcomed)

Hello,
We just purchased a 2004 Fun Finder.  It's in overall good shape, but it does need a little TLC here and there. 
Currently, 2 questions on my mind.

Do I have to have the Atwood switch next to my stove ON all the time, or do I just turn it on when I want hot water?  Don't want to have the switch off and still have LP flowing. 

How easy is it to get behind the walls and partions so that i can run wiring for speakers and the Xbox?
 
The water heater has a thermostat, just like your water heater at home, so you can leave the switch on 24/7. That way the hot water is always ready to use. Some people feel they can save propane by turning the heater on only when needed, which really means 15-20 minutes BEFORE it is needed. Whether that actually saves anything or not depends on your usage habits.
