My wife and I are interested in a kind of build-to-order option when buying our RV (either 5th wheel or Class A). We are not interested in the pre-installed sound or media (TV) systems that are seemingly in most RVs. Are there manufacturers that provide this?

One thing to consider, if you ever decide to sell your unit not having some options might be a deal breaker for buyers of your unit, unless you have those options put in before selling. Just my opinion.
 
Are you looking to delete those features, or to install some different components? Just curious, since the major RV builders generally don't want to deal with any options not listed in their order sheet. Even what seems like a simple "delete".

The high end brands that Wildebill mentioned are pretty much build-to-order from the frame up, but you are in high dollar territory there.  A factory-direct trailer builder such as New Horizons might accommodate you, though.

Very good point which I never though of before. I appreciate you pointing this out.

We are not interested in the built in sound systems because we have a high-quality portable blue tooth system (Bose) that we use with our iPhones that would work anywhere inside and outside of the RV. Also, we don't want a TV in the living room area as all our lives even with our children the living room area has been dedicated to communication, reading and relaxing with no TV.
