I don't see it on most RV checklists for buying but when looking to purchase a used motorhome, is it a good idea to carry along a long 2x4 to check for bow in the roof? I know about checking soft ceilings and looking for water marks but I would think this would be a given!, right?

I suppose you could do that if you wanted to be ultra-thorough, but checking for soft spots in the roof (not the ceiling) should be sufficient.  Just walk around up there and your feet should tell you if there is a water damage problem.  Assuming you haven't already spotted tell-tale signs from inside (water stains or soft spots inside).

Many RV roofs have an upwards bow anyway.
