Coachmen Freelander 19CB kitchen reconfiguration?

Does anyone know if it's possible to remove the dinette and kitchen and then just place the kitchen along the one wall so I can have more breathing space in the RV?
 
Well, I viewed one of these today and saw what was under the dinette and counter space. At the far end of the bench (wall side) is the small hot water tank and the other half of the bench is empty. Also there is nothing important (heat vent only) under the stick out counter space. So if someone wanted to reconfigure the kitchen entirely along the wall it would work. Also, there is nothing under the seat on the right as you enter, if you wanted to change that to something else. I was curious because I like this model but I wanted some floor space for stretching.
