Minneapolis to Mission Texas Stop over suggestions

So first time travelling in the winter.  We know we need to drive through Minneapolis and stay overnight in hotel because it will be darn cold - freezing in fact.  But we need to plan our next stop.  When does it start getting warm?  At what point on the route does RV parks stay open in February.  Can we just show up or do we need to book each RV Park enroute to Mission Texas.

When we come down from Minneapolis, we always stop at Eagle Ridge campground in Eagleville, MO. The problem is, they dont open until March 1.  Not sure how far you want to drive, but Kansas City is only a couple more hours on, and there are some parks there that are open year round, but Ive never stayed at any of them.

Usually, when travelling, we wait till early afternoon and figure out how much further I want to drive, then call around to find a spot. In some areas, you may have to call in advance due to annual festivals, rodeos, world series games, etc.
 
We used to go south from Kansas City in the winter. I am not sure at whay point campgrounds stay open year round. There are places to stay in Wichita, KS and Oklahoma City, OK. I used the Allstays app to find campgrounds. Once we decided approx distance for the day I would check for campgrounds and call for a reservation.
 
Seems to me that you'll want to let the weather determine your route... especially in Feb?  The "west" seems to be little warmer than the "east" this year, for instance.  In 6 weeks, who knows? 
 
In Oklahoma City, staying close to I35, north side is Fountain Hills, further on, between Okc proper and Moore is Roadrunner (very popular).  On south closer to Texas the Winstar casino has a nice RV park.
