We have a 2014 Jayco Eagle travel trailer.
Currently camping using a 7000w Generator and the onboard charger will not charge UNLESS we are running the AC or the Microwave.

What could be the issue?

Onboard charged last trip 2 months ago while connected to shore power.
 
That doesn't make any sense at all, so some further info would help. Is this trailer 30A or 50A shore power?  What outlet on the genset is it connected to and using what sort of adapter?  Have you checked to see what others 120v devices/appliances work or don't work?  It's almost inconceivable that only the converter/charger is affected. And what is the make/model of the converter/charger?

What kind of generator are you using?  Does it have an "economy" mode or idle control that reduces engine speed until a load is present?  A conventional generator does not make power when the engine is slowed down, only inverter generators like the Honda EU series can do that.

Here's one example of a conventional generator with idle control.

If you have one of these, it may stay in idle mode, not generating power until it senses a large load like the air conditioner or microwave has come on line, then it speeds up and starts producing voltage.

You'll have to turn off the idle mode and let the generator run at full speed when you want electricity, including charging the batteries.
