If I am going on several trips, maybe 4 - 6+ weeks apart, what should I be doing to my Fifth Wheel?

I generally dump my black and gray tanks at the last stop.  What should I be doing otherwise?  I am not talking about annual regular maintenance, although that is important too.

Drain water heater?  Drain fresh water tank?  Drain low points?  Just store as-is?  Sanitize fresh water tank?

Exactly what you are doing. No need to drain anything unless 1) with the last water fill up, the  quality is not to your liking or 2) there is a likelihood of freezing.

After I dump, I put a few gallons of water in the black tank. The water sloshes around on the trip home to break up any remaining contents and helps to stop the bottom of the tank (and those contents) from drying out.

Store as is but have a few gallons in waste tanks and water in toilet bowl. Not necessary to plug in if you have a battery disconnect switch.
