Anyone know how to turn off automatic updates on this Win 10 system. Seems they always start when I don't want them'

Not sure how to turn them off completely but I have seen a way to "pause for seven days"

Settings > Update &Security > Pause Updates for 7 days

I have not looked at the advanced options for this setting that are available just under that the above in small print.
You could pause for seven days when you are doing something that you don't want it to download updates and when you are finished un-pause.
 
The easiest way is to go to your Internet Properties and click on "Make this a Metered Connection".  It tells the computer that you are on a "pay as you go" data plan, and don't want the machine to auto download updates. 
 
In control panel.  Go into Updates and Security, click Windows Updates, then Advance Options.  In there you can select the toggle for updates.
