I had a oil and lube guy tell me that if someone pumps too much grease into the kingpins this will casue a popping noise in the front end as the coach rocks to and fro. Does this sound right?

It's possible but not very likely.  The popping will be grease being expelled from the joint and should not happen more than once or twice, since the excess is gone.  If you hear such a thing, complain loudly to the place that lubed it and take your business elsewhere in the future. There is no excuse for loading that much grease into a joint - just plain incompetence!
