I have a 95 adventura, how cold does it have to be before you worry about water freezing in the motor home when not in use
 
Any time the temperature drops below freezing for more than a few hours, there is a risk of damage.  That's why there are winterizing procedures.
 
Sort of depends - are you running the furnace? How many hours a day are you at or below freezing?  How far below freezing? Do you have any auxiliary electric heat for the plumbing bay (small heater, drop light?)  Have you installed any extra insulation in your plumbing bay?
