Laminate (e.g. Formica) is as light as you are going to get. Solid Surface, e.g. Corian, is heavier and a stone such as granite is much heavier. There are many gorgeous laminates available now and some of them are indistinguishable from solid surface or stone materials. A friend of ours built a million $ house in Washington state two years ago and chose laminate for all the countertops throughout the house . Absolutely stunning and none of the maintenance problems or Corian or granite. Top quality laminate is not cheap, though.
That said, any kitchen remodeling shop can build whatever type of countertop you want. I had a Corian top built to my specs for the computer desk I built into our coach.
