are these TT more in line for our TV?

In continuing to research our options with our current TV we have (hopefully correctly !) estimated that we could tow right around 5000 lbs using GCWR - GVWR of tow vehicle calculation. 

We still have yet to formally do a 'packed and ready' weight of our tow vehicle, but added body weight, full tank of gas and estimating about 300 lbs for stuff in the truck (not sure if that is an under or overestimate ?). 

We like these and hoping one will meet safety and weight criteria as well as make us happy for room for the family:

Surveyor SV235RKS or SP280BH
Trail Cruiser TC24RSC or 26BHC
Flagstaff 23LB
Rockwood 2306
Grey Wolf 26BH

We are trying to get a fair estimate of how much weight (stuff) one would put into TT to see if any of these would come below our 5000# mark.

Our TV is 08 Aspen limited 4.7 V8 4x4; has a GCWR of 11,000, curb wt 4900, payload 1600, front axle 3600m rear axle 3900.

Do you have the "towing package" on the Aspen?
I had a Dodge Dakota Crew Cab 4x4 with the same engine as yours and I could tow as much as 4,500lbs (with the towing package). You have to understand that when they (factory) come up with those numbers, is usually under perfect circumstances. That do not includes wind resistance, uphills, soft terrain etc..etc.
The towing package includes: tranny oil cooler, motor oil cooler, oversized electric fan (besides the mechanical), and bigger brake rotors.

If you use the GVWR of the tow vehicle as its weight when you do GCWR - tow vehicle weight, then you don't have to worry about how much stuff you put in it. You've already included its max weight in the tow capacity calculation.  So, if GCWR - GVWR leaves you with 5000 lbs, you have already accounted for passengers and gear in the tow vehicle and you ought to be able to tow a real 5000 lb (loaded) trailer. No further deductions needed.  Weekenders rarely carry more than a 1000 lbs of stuff in the trailer, even if the water tank is full. The tank isn't that large on that size trailer (typically about 30 gallons), so you are looking at maybe 240 lbs of water. Again, if you use the trailer GVWR  as its estimated weight, you can ignire the actual weight until you get a chance to weigh it after purchase. At least some of the models you mentioned have a GVWR under 5000 lbs.

The Rockwood 2306, for example, has a trailer GVWR of 4469, so even loaded to its max you are nicely under the 5000 lbs you calculated.

yes, we do have the factory towing package

If using GCWR - GVWR of tow vehicle I get 4350.  Is that a safety measure % that allows for the difference?

As long as the GVWR of the trailers you are looking at are at or below the 4,350# figure, you'll be good to go.
