The only real difference in RV paneling is that it will usually be pretty thin and have all the trim necessary to install it without fasteners. Like the strips that go between the sheets so it can be glued up and the edges look nice. If you like regular paneling, and can get the trim, it would be fine. The RV paneling would normally be solid (no grooves) and finished when it is installed. At one time, RV paneling was fastened up with little plastic discs and the screws went into the middle of them. That made it a little more decorative and that can still be used, of course, along with strips for the edges.
