Replacing black water tank- size question

I have a horse trailer with a small  living quarters in the gooseneck area. I have to replace the current black water tank because the existing one was too deep to clear part of the driveway and now it's damaged. Most of the time the tank would need to serve 1-2 people for no more than 4-5 days. I don't put any paper into the tank. What is the smallest size I can get away with? Any recommendations on finding a tank? It needs to be no more than 7" deep at any point. Right now I'm looking at  Inca plastics, as that was the name on the one I just took out.

There is no real way to answer that, since it depends a lot on the people using it. Frequency & length of flushes varies all over the map!  I would guess maybe 25-30 gallons?
