I have a similar RV. I would suggest checking your fan clutch. In hot weather its normal to see the gauge climb high quickly but drop just as fast when the fan clutch kicks in. A quick test of the clutch is to listen to it. It should make a increase in engine noise, a lot! almost as much as dropping into passing gear.

I also think an analog gauge would tell you more accurately what is really going on.

The old F53s with 460 had an excellent cooling system. The most common cause of over heating is a failed fan clutch. If you're not hearing a loud roar when the motor over heats, the fan clutch has failed. I've been across Texas, with my 460,  in the middle of summer with the dash air running full blast and the engine fan at full roar. Engine temp did rise 5 or 6 degrees above normal, which is not a problem.

Another common indication of fan clutch failure is cooler temp readings at highway speeds, and much higher readings when going slow or idling.

Lots of good suggestions, I like the idea of checking the fan clutch. When they replaced your thermostat did they use a “high flow” one? Did they use a cap that was the right PSI  for your application? You didn’t say how fast you were driving try slowing down to 55 0r 60 when it is getting hot and tell us how that works. Check the timing, you can always use a little more advance. Make sure all your vacuum hoses are in good shape. Be sure the fan shrouds is in place and there are no places for air coming in through the grill to escape except through the radiator.
I would check your actual temperature with one of the handy IR thermometer so you know what the actual temp is running.
