Baked Parmesan chickenby Lorraine
This recipe was uploaded to the RV Forum by forum member Lorraine in response to a request for favorite healty recipes.
This makes 1 serving, so double/triple/etc. for however many servings you want to make.
- 2 tbsp seasoned bread crumbs
- 2 tsp parmesan cheese (could use low-fat to lower the calories/fat)
- pinch of italian dressing
- pinch of salt
- 1 tsp olive oil
- 1 6 oz boneless, skinless chicken breast
- nonstick vegetable cooking spray
In a small bowl combine seasoned bread crumbs, parmesan cheese, italian seasoning, and salt. Mix well. With a paper towel pat chicken breast dry (I like thin chicken breast, so I pound mine out flat, but it's really not necessary). Lay chicken on a plate and coat with olive oil. Cover chicken with bread crumb mixture, coating all sides, and place in baking dish sprayed with vegetable cooking spray. Sprinkle remaining crumbs over chicken. Bake uncovered at 375 for 35 to 45 minutes or until done. Makes 1 serving.
