- 3Tbls Butter melted divided
- 1/4 tsp salt
- 6 skinless, boneless chicken breast cut into 1 inch strips
- 1 medium onion
- 1 cup sliced fresh mushrooms
- 2 medium zucchini, sliced (I used bell pepper)
- 1 tblp all purpose flour
- 1 cup chicken broth
- 1/2 tsp basil
- 1 8 oz carton sour cream
- 2 tsp dry mustard
- cooked rice or noodles
In an 2 quart casserole, place 2 tablespoons butter, slat and pepper. Coat chicken pieces in butter. Microwave HIGH (10) for 8 - 9 minutes; stir after 4 minutes. Add onion, mushrooms and zucchini. Microwave at HIGH (10) 4 - 6 minutes; stire after 2 minutes.
In a medium bowl or a 4 cup measuring cup, combine 1 tablespoon melted butter and flour. Add chichen broth and basil; stir well. Microwave at HIGH (10) 3 - 5 minutes, stirring every minute. Add sour cream and mustard; stir to blend. Pour over chicken and vegetables. Microwave at HIGH (10) 3 - 5 minutes until heated through. Serve over rice or noodles.
