    Funky fuel gauge

    Don't know if a OBD2 gauge/scanner/reader (such as OBDLink or Edge CTS3) would work with a faulty sending unit but if the problem is the instrument panel gauge it would give you a backup gauge.

    Heat/AC issue

    Is your A/C blowing cold air or is the fan only running? I usually run my A/C with the fan in the manual setting of low or high. If I leave it in the manual setting, the A/C blower comes on when I run the furnace. I have a Dometic Thermostat.

    Could be the black tank rinse. You could verify by opening the black tank valve and connecting a hose to it and see if it drains.

    Water heater NR valves

    Are you sure the new valve has failed? On my fifth wheel, it had one bypass valve on the inlet to the water heater.
