We are coming from the north and going to grant campground that is on the south side of Yellow Stone. On different map apps it keeps taking down to the South side of Yellow Stone and around the teton's which adds a lot of miles.
Why doesn't it take me to the West entrance and through Yellow Stone to Grant campground?
Should I not drive from the West entrance to Grant campground?

It is routing you the long way because no doubt the roads in Yellowstone are closed now. Is Grant campground even open? Mostly only snow vehicles can access Yellowstone this time of year.
 
Even if they're 'open' I wouldn't expect anything resembling a sustained speed. Between the looky-loo's, wandering bison and congestion in general it took us a couple hours to get from the west gate to old faithful and that was pre-covid crowds. You can certainly take the park roads and get from here to there but I wouldn't put a schedule around it.

Traveling in the Rocky Mountains in January in an RV is not the best time to visit Yellowstone. The average altitude in Yellowstone is 8,000 ft. Likely to run into snow storms and below zero temperatures. Most roads in Yellowstone are closed in the winter.
 
If you are coming in through West Yellowstone, it would be logical to enter through the west entrance and then turn south on Route 191. It will still take you over an hour to drive that route, depending on traffic, but you certainly do not need to go through the Tetons.

Your map app is assuming you are leaving now instead of summer. See if it has a way to set a departure date. I just checked Google Maps, and it is doing the same thing as your app. However, there is a "Leave Now" option that allowed me to set the departure time and date. See the attached screen capture that shows the shorter route after I set the departure date to July 15 and the departure time to morning.

Just checked NPS Yellowstone website, those roads are only open to over snow vehicles. We will be there June 10-17, 2022.
