Also if you are in a smog area swapping an older motor into a new vehicle is a no no typically..
Engine swap is pretty basic as long as motor is solid (leak down test, oil pressure)
I would do seals and timing chain when out...
I built a headliner out of Mahogany door skin panels (super light 3-ply) very cheap. I just fastened to the roof and stain/varnished mine but you could easily rug it after if one wanted....
Nice material to work with used a sharp utility knife for most cuts.
I have always found Ford vans and 5 tons (older models mind you twin beam and live axles) to need to be driven so you do major corrections and not little imputs...
My 1980s Dodge and current C-class 1983 GMC drive like cars... Fords have always been truck like....

I added a small hand pump to the kitchen sink that gives me all the water I need.... I never run the pump (no electricity)... LED lights buy me days.... Fridge pure propane.... Stove pure propane... small LED tv with built in DVD for the kids.... Small...
I agree with renting one to figure out what you want... If you are not mechanical having in checked is money well spent (i bought my last one sight unseen, and sent the money 7 weeks before I went to pick it up (private sale))...

Personally I would put a Cummins in since I like an inline over a V design...

What chassis? what tank... if it is a standard ford/gm tank a new tank might be under $50.00
Good way to dispose of old fuel is in a vehicle going to the wreckers... let them drain it there and does not affect the value at all..
my RV we have two 5 gallon water-cooler jugs stored behind the drivers chair (with a tie down strap) and then a copper line to a hand pump mounted in the sink.
it takes no battery power, costs $3.00 a bottle to fill and give nice tasting water.
