Battery Monitor.Please help me understand what I'm seeing.

Do any of the portable panels have a place to attach a secuity cable?

One of mine has some eyelets in the corners for suspending them which would work to a fashion. Nothing says you couldn't use some construction adhesive to glue a ring or hasp somewhere and add one. As you say, only deters the honest thief.

It's 55 amps,so that would be 660 watts,correct?

If you figure 90% efficiency it's about 600W input. Splitting hairs though, we don't know what the surge current is for the microwave. If you wanted to you could get one of those Kill A Watt meters and measure all your equipment directly. But at the end of the day you're "close" and my inverter genset seems pretty touchy near max load. Definitely not a "slow blow" when it comes to transient overloads.

there must be a switch to turn to converter off?

You probably have a breaker that controls it but maybe along with other things on the same circuit you may not want shut off. If you think this is a feature you'd want it'd be pretty straightforward to wire a standard household wall switch to the outlet the converter's plugged into.
