Well the doctor and inability to buy pants that fit in "normal" stores finally got my attention.

So what are your favorite healty recipes, cookbook?

Baked Parmesan Chicken
(this only makes 1 serving, so double/triple/etc. for however many servings you want to make)

  a.. 2 tbsp seasoned bread crumbs
  b.. 2 tsp parmesan cheese (could use low-fat to lower the calories/fat%)
  c.. pinch of italian dressing
  d.. pinch of salt
  e.. 1 tsp olive oil
  f.. 1 6 oz boneless, skinless chicken breast
  g.. nonstick vegetable cooking spray

In a small bowl combine seasoned bread crumbs, parmesan cheese, italian seasoning, and salt.  Mix well.  With a paper towel pat chicken breast dry (p.s.  I like thin chicken breast, so I pound mine out flat, but it's really not necessary).  Lay chicken on a plate and coat with olive oil.  Cover chicken with bread crumb mixture, coating all sides, and place in baking dish sprayed with vegetable cooking spray.  Sprinkle remaining crumbs over chicken.  Bake uncovered at 375 for 35 to 45 minutes or until done.  Makes 1 serving.

Chicken or Fish:

Marinade:

Mix together
Light Italian Dressing  - 1 bottle
Garlic Powder or Crushed Garlic to taste
Salt/Pepper to taste
Optional:  Cajun Spice (I love it)  to taste.

Chicken:  Marinate 30 minutes (Can marinate overnight).  Grill over slow coals with LID ON for approximately one hour, turning every 10-15 minutes.

Yummy.  If you have leftovers, chop  the chicken up and serve over a Caesar Salad (you can get a kit bag at WalMart).

Fish:  (I prefer Salmon or Tilapia).  Marinate 15-30 minutes.  Put fish and 3-4 Tablespoons of marinade in a frying pan and simmer til done, turning at least once, browning each side.

You can also serve Salmon leftovers over the Caesar Salad for a scrumptious meal.
 
Having had a triple bi-pass 18 yrs ago and being a diabetic,  I leave the cheeses off and also refrain from Salmon.  the reason for the Salmon is my heart specialist's idea is that Salmon is a red meat and isn't as good for you  as pork.  His idea not mine.  But then the other factor takes claim of that  I hate the smell of salmon PERIOD  End of case for me.  Too eachhis own.

Sounds to me like your heart specialest may belong to the Pork Growers Association. ;D ;D
 
We like chicken grilled outside or on the Foreman grill after marinating it for a short time in a mixture of soy sauce, minced garlic or garlic powder, and ground or fresh grated ginger.  Serve with white rice and a green veggie.  For extra flavor add a little pineapple juice to the marinade and serve topped with a grilled pineapple slice.


 
Don't know about his  affiliation to the pork growers.  Don't think he is   He's Jewish, but you never know.  Doesn't matter to me cause I don't like the smell of Salmon anyway.  Always smells like spoiled fish to me.  However the Boss loves it.  She cooked some couple days ago and I went out back and cooked some chicken on the grille.
 
My husband hated salmon too.  He maintained salmon was too mushy.

But he loves my salmon - it cooks firm and flaky when you use very little marinade in the pan.  Surprised the heck out  of him.  Now he will even ask me to cook it.  ;D 

BTW - Salmon is VERY good for you.  It is high in anti-oxidants (read anti-cancer) and the good fats, fish oils (read dietetic).

My husband has diabetes and the dietician says it is one of the foods he Should eat.  It is also good for your heart.

Your doctor doesn't like LOX and bagels?  Horrors....  ;D
 
Yuk  in the service  for an elongated period of time I lived on raw fish.  NOWAY Charlie  I'll do without.  Son and grans love it.  I'll take BAked  Cod or Fried (Not supposed to have) Walleye any day of the week  Also love Crappie, red Ear and Bass if I have to lower my standards>  Just a preference and it is with others.
 
Lawry's Mesquite or Teriyaki Marinade - pour it over chicken or fish, marinate for 15-30 minutes then grill.

Another one that takes more work: Mix olive oil, basil, and garlic salt (garlic powder if you're watching your sodium), brush on boneless chicken breasts, broil 5-6 minutes on each side.

Joel try the George Foreman grill, I LOVE mine  ::)  Great for marinated vegetables, steaks, fish, shrimp etc! It cooks reasonably fast, drains off the fat and because of it size (mine is small) you won't be cooking huge amounts.
 
Skinned chicken thighs, marinated in olive oil, course ground pepper, garlic, and Goya Adobo all purpose seasoning. 

Slow open grill until about 165 degrees, red skinned potatoes with butter, and fresh California Central Valley asparagus, sourdough bread, and a good bottle of Petite Sirah.

Perfect!  (Who's coming to dinner?)    :p
