We've narrowed our pick down to a 2025 Fleetwood Insight. This is new to the market so I couldn't find any reviews.
Fit and finish is great. Sprinter chassis with a Cummins diesel. Lithium batteries with solar panels. You can run the AC off the batteries.
Any helpful insight would be appreciated.

Probably not a bad buy, they have the best interior decorators in the business right now and everyone else is trying to play catch up and they also own Renegade - this could be built on the same line or could even be a re-badge. As with any sprinter chassis, make sure the cargo carrying capacity is sufficient as some are as low as 600lbs with no water or people even in them yet.

Running an ac off the batteries is less a challenge than having enough panels to replace the power used. How big is the battery bank and how many watts of solar panels?

Interesting, but I suspect it is a gross error of some sort. The engine in question is the Mercedes OM654

Yes, I read thru or at least scanned over the links below.

Daimler Truck AG and Cummins Inc. announce global plan for medium-duty commercial vehicle engines

Basically this is a 2.0L engine that replaces a 3.0L engine yet produces 24 more horsepower and has 13% lower fuel consumption than the old motor. The entire emissions system is part of the engine package to make certification much easier. The Motor Trend article gives information such as the offset crankshaft so the pistons are not side loaded as the crank goes around. Lots of unique stuff.

Buttttttt............ I didn't find Cummins mentioned anywhere. Someone needs to seriously confront Fleetwood on their statement including Cummins.

I did find this Cummins press release that details a joint venture with Daimler on the manufacture of Cummins medium duty engines in the Daimler Mannheim plant. Here is the MB press release on the same joint venture.

I think it is a way long stretch to infer that the new Sprinter engine is a Cummins engine.

The spec clearly states a 2.0L Cummins (an engine I've not heard of before). Here are the detailed specs.

I note that the GVWR is only 11,030 lbs. That's won't leave much OCCC once the big 3500 van is equipped full of furniture, appliances, fuel & LP, etc. Water & passengers will eat pretty much all that is left.

You haven't heard of it because (I do believe) it isn't. Read thru the links I posted. The Sprinter comes with a dyed in the wool Mercedes engine. I did a lot of searching and reading, and the closest I came to Mercedes and Cummins in the same article was the joint venture for the Cummins medium duty engine manufacture in Germany. The goal is for Cummins to gain Euro VII emission certification and for Damiler Trucks to scale back manufacture of their own motors in favor of the Cummins in trucks and busses. Of course, Cummins does provide engines to Freightliner, a company owned by Mother Benz, and probably will provide more, as Cummins replaces Mercedes engines in the medium duty market.

In any case, I posed the question on the Sprinter-Source Forum as to why Fleetwood would claim that their Sprinter based motor homes are Cummins powered. The people on that forum are, as you would expect, focused on Sprinters and will have any information, if there is any.

Thats a mess up from the marketing coordinator that does the brochures - it should be brought to their attention before they end up getting sued.

I suspect that the Mercedes 2.1L diesel in the Sprinter is the one produced in their partnership with Cummins in Europe. Enough truth so that it's only a small stretch for a US marketing team to loudly proclaim "it's a Cummins", making it more attractive to American buyers.
