What is the name of the grey, sticky, putty type sealant used on exterior RV components?

It's called butyl caulk.

Butyl comes in  gray or black and is nearly always in the form of tape (squeezable butyl is usually called gutter sealer, but its the same stuff). Butyl tape is typically used between two pieces of metal and not applied in an open gap or on a surface.

That said, there are several brands of sealant (caulk) used on RV seams and they can be most any color you like, clear, white, gray, tan, dark brown. They are mostly not butyl, e.g. they are urethane, acrylic, silicon or a blend of those.
