I have a few Ikea, led, gooseneck lamps that I use on machines in my shop. They would be great reading lights in the rig.
The converter plug says 7 volt output. Anyone know if the led would handle 12-14 volts?

Maybe, but I would be afraid to try.  There are formulas to determine what size resistor is needed, based on LED specs.  Unfortunately, I do not remember them.  Google is your friend.

The 12 volts in an RV is anywhere from 12.5 to 14.5 volts depending on many factors.

Use an adjustable buck converter.  Easy to find on eBay.  They cost a couple of bucks each.

are you sure it's 7 V DC?  Some lighting I've seen is low voltage, but AC
