Up until now we have never used our TT in the winter, but I am thinking about trying to find a really nice RV park where we could go for about a 2 month stay in the middle of the winter. While it might already be too late to make a reservation for this winter, we could hold off on this trip if need be to the following year. Ideally we want to be on or very near the ocean, with a full hook up for our camper. Hoping to get recommendations from the folks on this forum. I'm open to almost anywhere on the Gulf Coast.

Afraid I'm of no help but given we  might be headed that way as well this winter I'll be interested to see any recommendations. Probably not that long a stay, but...

You can probably find something more towards the center of the state at this late stage. Go ahead and book it. Then go exploring the gulf coast and see other parks. Then you can pick one out to reserve for next winter.

You might be able to shuffle around this winter,  a few weeks here and there.

Check out Cedar Cay.

If you don't mind the occasional cold night I am sure there are plenty of places left on the upper gulf coast.  Consider south Louisiana (here is a link to average January high temperatures for SW Louisiana) https://www.weather.gov/images/lch/climate/normals/JanuaryHighTemps.png  I would suggest somewhere on the north side of Vermilion bay around New Iberia or Abbeville, maybe not the nicest views of the water, but we have better food over here than they do in Florida, there are even outdoor things to do like https://www.ripvanwinklegardens.com/ https://www.tabasco.com/visit-avery-island/ , etc

For places to stay check out http://bettysrvpark.com/ or if you like doing the state park thing, maybe https://www.crt.state.la.us/louisiana-state-parks/parks/palmetto-island-state-park/index as of tonight they have multiple vacancies every night from the Friday after thanksgiving until Mardi Gras (March 5th), though officially they do have a 15 day stay limit.

Try OakGrove RV Resort in Labelle, FL.  Close to Fort Myers.  Brand new park, 40 x 80' paver spots.  Real great people that run it.  I stayed there for 2 months last year.  A bit pricey, but very nice place.

We've never stayed here, but many folks we have talked to like it:

For those considering the upper gulf coast in winter, the USDA plant hardiness zone map will give you a fair idea of where gets the coldest on average.  https://planthardiness.ars.usda.gov/PHZMWeb/  Surprisingly the warmest parts are the upper Texas and Louisiana coast, which are warmer even than north central Florida.  Though of course Florida has slightly nicer looking water going for it.

Gulf Coast State Park in AL is nice and allows reservations up to six months. We were there a couple of years ago and are there again this December. At this late date, you?d have to be willing to move around within the park for a stay longer than a week or so.

My wife and I stayed here about a month ago. Very nice park.
