I'm looking at getting a 2400 watt power station for my Fifth wheel. My question is if I plug my RV into the Power Station to power SOME of the outlets do I have to shut off my converter?
 
You don't have to, but you will consume a lot of that power station's capacity charging your 5W's own battery bank. Unless it has a huge battery pack, that 2400W power station won't last long in any case, so better not to use it for battery charging. I suggest disabling the converters charging if you can, but you may still need the converters 12v output if the RV battery is mostly discharged. [Much of your RV runs on 12vdc].

A typical hand-carry 2400w power station has a capacity of about 2000 watt-hours (wh), so less than an hour of use at full load. Even the bigger wheel-around models seldom exceed 2500 wh unless you buy expansion battery packs.
 
And once you've depleted the power station, how are you going to recharge it?

I would yes What do you want to power? You would likely do better to power it "direct" off the power station I have 3 one small "Portable" and one each as UPS for fridge and freezers plus some additional back up options in my apartment.
