QZ 06 Potluck Recipes

Chicken Enchilada Casserole

4 cups  Cooked chicken (or turkey)
1 8 oz can sliced drained water chestnuts
1 10 oz can black olives drained sliced2 (10 3/4 oz ) cans cream of chicken soup
1 cup sour cream
2  6 oz cans green chilies drained , chopped
3/4 pound Monterey  jack cheese shredded
1 14 oz bag Doritos crushed (or similar chips)

Mix water chestnuts, olives, sour cream, soup, green chilies .
In greased 13 x 9 pan layer 1/2 Ci=ips, 1/2 sauce, 1/2 cheese repeat.
Bake 30 minutes at 350 or until top is bubbly.  Longer if ingredients have been refrigerated in advance.
 
Strawberry Cheese Cake

Keep frozen
Then thaw for 90 minutes.
Cut into serving portions
Remove and place on paper plate
Trash Sara Lee wrappers so it does not appear 'store bought'

Here is the Fruit Salad Recipe and the Sweet Potato Supreme Recipe from Shirley.

FRUIT SALAD

4  Bananas
4  Apples
2  Cans Pineapple Tidbits, drained, saving the juice.
1  Cup chopped Walnuts or Pecans
1  Cup Mini-Marshmallows

Juice of one lemon sprinkled over apples and bananas to keep them from turning Brown.

DRESSING FOR THE SALAD

Juice from the canned pineapple
1  Egg, beaten
1/2  Cup Sugar
1/4  Tsp Salt
2  Tblsp  Flour
1  Pint Whipping Cream
1  Tblsp  Poppy Seeds

Heat pineapple juice.
Mix sugar, flour and salt;  add to beaten egg.
Add this mixture to heated juice and cook until custard consistency.
Cool mixture and then blend into the whipping cream;  add poppy seeds.  Stir well.

Mix with fruit and marshmallows.  Add the mixture gradually because there is usually more than will be needed.
Can be refrigerated for several days and used with a smaller batch of the fruit.

SWEET POTATO SUPREME

3  cups of mashed potatoes
2  eggs beaten
1/3  cup of butter
1  cup of white sugar
1/3  cup of milk
1  teaspoon of vanilla

Mix together.  Spread into greased 9x13 baking dish.

TOPPING

1  cup brown sugar
1/3  cup butter
1/3  cup flour
1  cup chopped pecans

Mix and place over potato mixture.
Bake at 350 for 30 to 45 minutes.
TIP:  I use the frozen sweet potato patties.  32 oz. size.

Tom I missed this message at Quartzsite because of stupidity on my part so here is my recipe for Company Potatoes.? Better late than never!!!!!?

Company Potatoes

Betty Crocker Potatoes Buds or any instant potatoes (for 8 people)
2-2/3 c. water
2-2/3 c. instant potatoes
2/3 c. milk
4 tbsp. butter
1 tsp. salt

Follow directions on instant potato box

1? 8 oz. package cream cheese
1-1/2 c. sour cream
8-10 potatoes, cooked, mashed or the above instructions for instant potates
Garlic salt to taste or garlic powder if salt isn't in your diet
1-2 tsp. chives
5-6 tbsp. butter if using real potatoes
Paprika

Add cream cheese and sour cream to prepared potatoes beating until light and fluffy.? Season with garlic salt and add chives.? Spoon into 2 qt. casserole (greased).? Brush with soft butter.? Sprinkle with paprika.

Bake 30 min in a 350 degree oven.? If made ahead & refrigerated bake 1 hr. or microwave for 30 min. on high.

Scotch and Ice:

Purchase 1.75 liters Scotch whisky of your choice.
Carefully remove cap - aluminum (a.k.a. aluminium in some circles) cuts are worse than paper cuts!
Filll glass with ice; 6-7 cubes should be sufficient.
Fill surrounding areas with scotch.
Sprinkle liberally with good conversation.
Sip slowly and enjoy!

Note: Makes any Quartzsite food taste twice as good, but not required - Everything was DELICIOUS! ;D
 
LOL Karl. How about your favorite Guiness:

  • Carefully open the can and let the CO2 do its thing.
  • Slowly pour into a glass.
  • Use knife and fork.
  • Enjoy.

Ive been wondering about this for the last 6 months now, but felt stupid asking, but I cant hold off any longer :-

A potluck or potluck dinner is a gathering of people for a meal where the participants are expected to bring food to be shared among everyone at the gathering.
 
LOL Paul. Everybody brings something and everybody grabs what looks good in a buffet style. I can't think of a UK equivalent other than something that's not printable.

Potlucks are pretty good, but sometimes you get some stuff that you don't like. The main purpose of a potluck is to have fun with other people while filling your face.
 
OK - I thought it was like that, but had to ask.

So, when going to a PotLuck, how much food do you prepare ? - and should I give everyone advance notice that Im a big eater? ;D ;D

And finally, a 'cookout' - just cooking outdoors rather than inside?

A potluck is where every 2 people bring food for 8, thus insuring lots of leftovers :)

A cookout usually involves burning good chunks of meat and lots of various sausages on a grill, accompanied by towering flames.  I'm partial to bratwurst myself.

I've never attended a potluck that didn't have enough food.

BTW you didn't ask about a cook-off  :)

You almost got it right.

This should read:

Buy 1.75 liters of CHEAP Scotch.
Fill glass with ice;
Fill surrounding areas with Scotch;
Carefully place glass on ground where your friends can not see it and will kick it over.
Make sure their Scotch is better than yours. ;D ;D ;D
