I have a Norcold and was wondering what if any and how to maintanance it?

Do you have an owner manual for it? Maintenance is described there.  You can download a manual at one of these sites:

Most of it is basic stuff like "Make sure the LP gas pressure is within range". If the fridge is working ok in both LP and electric modes, there probably isn't anything you need to do on the backside. The interior, of course, needs routine defrosting and occasional cleaning.

If your a weekend warrior like myself the defrosting and interior cleaning is done each time the RV is parked for storage. But since its not normally used day in and day out make sure that no critters have built a nest in the burner area or flue. Spiders and wasps are good examples of what to look for.
