One time they invited me to come to dinner, and their Ma cooked up a 'Possum.The Virginia Opossum (Didelphis virginiana) aka common opussum aka possum occur statewide In Texas except for the arid Trans-Pecos and Llano Estacado of the Panhandle. It is also North America's only native marsupial (pouched mammal). Apparently they are edible but I never et one and don't think I would.

I grow my own tomatoes and onions and garlic and peppers and herbs. So that's my start off point. Meatballs or sausage or both. We eat meat here.
Most important requirement is the noodle.
It must be vermicelli, or I can't eat it.
If it is vermicelli, salt and butter is fine I don't even need a sauce if we are in a crisis situation. hahahha
