What toy hauler can I pull with 2018 F-250 Diesel? Recs???

Since it's a private vehicle, there is no particular need to get it officially re-certified for a higher GVWR. An owner can upgrade however he likes.

There are also suspension packages (sometimes called camper packages) that beef up the carrying capacity to handle truck campers.  Ford probably has one and you could even get it dealer installed to make it official Ford (avoiding any potential warranty concerns). Might be enough to get your carrying capacity up where you want it.
 
Don't know about the Fords, but it was easy to increase the payload capacity on my Dodge 2500.  When my wife changed gears for a bigger TH, I called the dealership because I saw they had a good deal on a single axel 3500.  I asked about towing capacity, my 2500 was better, the only difference between the 2500 and 3500 was cargo capacity.....she went even bigger and now I have the long bed 3500, dually, where there is quite a bit of difference.  I would have pulled both the Fuzion 371 or Grand Design 351 with my 2500.

At 3000lbs min pin weight plus you and you wife. Plus the hitch weight puts you at least at 3500lbs in the truck - while you may have pulled it with your "2500" you were at the very min over your limits and stressing the truck. Its not if you can do it because you can - its about doing it within the legal limits of your vehicle in case of an accident in which you are potentially liable and over the limits of your vehicle and the undo stresses put on the Vehicle.

The 2500 is not going to break it two pieces because your over weight by a couple or few pounds - but over time and depending on how much and where you tow - brakes, trans, springs, rear ends , coolers are put under undo stress and run a HIGHER risk of failure. In today society of crazy people suing for everything under the sun an accident lawyer will have a blast suing your butt because you exceeded the limits of the tow vehicle and the insurance company may potentially kick you to the curb and deny your claim.

You didn't say if single cab, super cab or crew cab.
Towing chart shows a low of 14,000 lbs with 3.31 gears (conventional tow) and only slightly more 5er/gooseneck.  Payload will be more of a limiting factor.  Search the ford website and look for specifications or capacities to find the complete towing guide. 
 
The maximum load (payload) for YOUR  pickup is specified on a sticker on the door post. Remember a trailer puts 10-12% of its load on the hitch and a 5th wheel trailer puts 20-25% of its pin weight on the hitch.
