Yeah I think it is niceto be minimalist. I do think it is harder to do than 1st thought. I think my teardrop needs a rule. Put something in, take something out.

I get about 40MPG in my Jetta Tdi pulling my teardrop trailer. Love it!

50 watts of solar should give you about 15-21 aH of charging power per day. Should be good if you keep loads low and conserve where ossible.

Just a note to let you that Go Power does make a proper transfer switch to have solved your intial problem. It has bot the charging outlet and autotransfer switch for shore power. Looks like you moved on, but that is the setup I use in my Teardrop trailer...
