I can tell you that Memphis has some good food.  If your barbeque is not great, you're not going to be in business very long.

Unfortunately the area is not good for RV Parks.  Every in city RV park is in a dangerous location, including T.O. Fuller State Park.  Even the RV park in West Memphis is in a very high crime area.

I would suggest you check out the Tunica,, MS casinos to see what RV facilities they have (20 miles south of Memphis.) 

Or stay at Shelby Farms RV Park.  It may be a little quiet on a 5000 acre farm, but you're just 1-2 miles from good restaurants.  At least you're going to be safe there.
 
If safety is a concern we stayed at the Graceland RV Park once and it was a little crowded but certainly safe.
 
Personally, I did not have any safety concerns during the drive to Tom Sawyers RV Park or while we were there. There is nothing else around the RV Park except fields and a mighty big river. Again, I followed the directions given on their website.

The biggest problem with Tom Sawyer's RV Park is getting across the RR tracks.  Freight trains do a lot of "delaying" there.  Luckily, after sitting for close to an hour waiting on a freight train to clear the crossing, a local in a pickup showed me another way around...waaay around.  The park's location would require crossing those busy (read "blocked") tracks to drive across the river to Memphis.  It's a nice park, but pretty inconvenient unless you just wish to watch the river barge traffic.
 
When we changed our minds about Tom Sawyer's, we stayed at the Graceland RV Park that Jeff mentioned. Since my other half wanted to visit Graceland, it was quite convenient (across the street).
