pressure washing the Grill

Got through cooking a brisket on the weber grill yesterday, and to clean up the grill I thought... Why not use the pressure washer? Make short work of removing the baked on grease and ash... Not a real substitute on getting the grate really clean, but to clean up the housing, easy.
 
Tell me how to cook a brisket on the Weber.  Please.

Indirect heat.  I suppose.  I have never tried that but want to.

How big a brisket and  do you use a water pan?
 
Set a drip pan in the center of the grill that holds the coals. Build a fire on each side of the drip pan... About 15 to 20 briquets. After they have ashed over spread out on each side of the drip pan. Place the brisket fat side down in the center of the grill. I soak mesquite chips in a pail of water and alternate between wet mesquite, dry mesquite or charcoal as needed to keep the fire going. You need a very slow fire with a lot of smoke. Just adjust the air intake and exhaust to barely keep the fire going. Smoke the brisket about 6 to 8 hours... longer is better. I take mine off and then wrap in foil to cool. Kind of steams it for the last half hour.
