Question - Adding new fittings on my Attwood 6 Gal water heater

I'm changing out the elbow fitting on the cold water inlet. What size is that fitting 3/8" or 1/2"? The brochure does not say.

The one that's in there looks like a Flair-it fitting. Is it better to use a brass or plastic, Flair-it, fitting?

Those plumbing lines & fittings are provided by the RV builder, not Atwood. The tank water inlet and outlet are 1/2" NPT, so presumably the water lines to & from them are also 1/2".  Plastic, e.g. Flare-It, is fine as long as rated for hot water.
 
I don't remember if the plumbing Winnie uses is standard NPT or some other proprietary plumbing system for the inter-connectivity, it might be a mix. Buy a few fittings of different sizes at a DIY store or your local RV dealer might have a few plumbing parts. I carry quite a few spare plumbing parts and a spare water pump in the Horizon.
 
Probably not Pex, Winnie might use Pex now but back then it's some kind of semi-flexible plastic hose and slip on flare fittings. It's a complete PITA to work with.
