Anyone use a smoker while camping? We love smoking our food but our smoker is just too big for the RV.

I just looked at this little smoker at Academy Sports here in Texas. Just big enough for a pork butt or a medium size brisket small enough to fit on storage.

I make my baby back or Saint Louis style ribs on the road. I dust them real good with my homemade pork rub and wrap them all night. I semi smoke and brown the ribs in my small portable charcoal grill with some mesquite wood for about 15 minutes then I wrap them in foil with some honey, brown sugar and apple juice for an hour and a half.  Then I light the grill again and finish them on the small grill with some homemade sauce. Finger licking good and taste just liked smoked.

here is a small one, might work ok with wood chips.

Dang this thread and especially Chip!

Had to change my drool bib twice to get through it!

Looking forward to seeing you all at Moab........

We will definitely have to do a rib night again as long as your lovely wife brings some of her delicious brownies.
