Well I wish I knew what I did to fix it,but all seems to be good now. I did find that the PT was stuck open just a little bit(pushed it and it pop back in) maybe that's what it was???????? I let it run for a few minutes to heat up and it shut off just like it is suppose to.Maybe this is just a fluke and it will happen again when we go camping this weekend. I also noticed that the tape holding the thermostat in place was a little loose so I tightened it up as well. Replaced the air gap in the tank too (thanks for the info Gary)

The thermostat just sits in an opening and rests against the metal side of the tank, so it may not have been making good contact. That would let it heat up quite a bit more. Make sure that tape is adhering well and add more if you need it.
 
i had a similar problem and it turned out to be "crudy" connectors. They just plugged and unplugged all five connectors (in the hot water panel box) and now it works fine. He said alot of dust gets sucked into the hot water vent when you are driving and they get dirty. Can't answer the too hot question--mine is also and have not found the answer.
 
had the same problem... removed every blade connection I could find and reconnected them, one at a time. then it worked normally.  dust, corrosion, oxidation, who knows?
