I have a Safe – t- alert 35-742 carbon monoxide detector that has seen the end of its life. I was thinking about replacing it with the Pangaea digital… but I guess this only covers LP gas?

Does anybody have a good replacement for this, or should I not mess with it, and replace it with the same model?

Looking at the listing on Amazon, it appears to be an exact fit replacement for the SIZE and SHAPE unit you have (BUT LACKING THE CO DETECTION), and at $43.90 is cheaper than the comparable MTI propane only detector $58.15 (brown is slightly cheaper at $54.66). However if you do not currently have another CO detector, you would need to come up with one, adding to the cost. I have a First Alert Powered Alarm SCO5CN Combination Smoke and Carbon Monoxide Detector, Battery Operated which is exactly what was installed by the factory in 2008 (and I replaced in 2020 with the same thing). I added the exact same combo unit you have when I replaced a surface mount MTI LP detector. The original LP unit was on the end of the dinette and was apparently a good footrest judging from the holes where it was remounted several times, so I installed a flush version like yours to solve that issue.
