Mine is a Texas Red, ground beef or bison, sirloin cubes, cocoa, coffee and sugar to offset the acid in the coffee and cocoa. NO beans!! but do add tomatoes
I like it hot but the DW does not. She like lots of beans and I do not. So we compromise.
We started with a recipe for Turkey chili and changed it over the years. Rotel spicy stewed tomatoes substituted for tomatoes. A can (or 2) of diced green Chili's. 2-3 times the cumin the recipe calls for. 2-4 times the chili powder. Half the beans, and for everyone's sake if you use canned beans rinse that nasty 'liquid' off them. It's full of sugar. I like to put in chunks of whatever leftover steak I find in the freezer.
I add hot sauce to taste when I get a bowl. My favorite for Chili is Jardine's "Blazing Saddle". I've been known to use "Dave's Insanity" on occasion. I put two small dollops of Dave's in a pot once and she wouldn't eat it at all and now she supervises every move I make around the chili.
