Our 88 Suncruiser had a cocktail chair and pocket cocktail table behind the passenger seat. The Sunstar lacks such a luxury. During our last 3 trips, i schemed on how to make a removable table for between the front seats.
After a few false starts and a lot of thinking, this is what I've come up with . It's not finished, but its usable enough that I can fine tune it now.
Attached are pics of the table installed on the doghouse, and the table installed in the coach, and the table folded.
The top and legs are connected with drop-leaf hinges. The 3/4" square support tubes are connected to the legs with folding table leg brackets. Those slide into 1 x 1 square sockets bolted on each side of the plastic cup holder.
Once I'm happy with it and have made a nicer top, it'll all get finished to match the interior woodwork.
