Hi All
My wife is vegetarian and I eat almost anything. She is not a full blown vegesaurus as she eats eggs and seafood. Planning dinners can be a challenge at times. Curious if anyone has any favorite vegetarian recipes they might want to share.

Ugly Green Eggs

1 very large yellow onion.
6 extra large or jumbo eggs.
5 oz. grated cheese. I prefer swiss or a taco blend.
2  medium portobello mushrooms. In a pinch, an equivalent amount of some other mushroom.
10 oz. package frozen creamed spinach. Non-creamed will also work.
3 Tbl. sp. olive oil
(optional) 5 oz. sausage. My favorite is Gilbert's pineapple, ginger, brown sugar chicken sausage.

Chop the onion and saute it the olive oil using low heat. Turn frequently, and cook until the onions are tender, about 20 to 30 minutes.

While waiting tor the onions, coarsely chop the mushroom and sausage if you are using them. Crack and scramble the eggs. Prepare the spinach according to the package directions.

When the onion is tender, add the mushrooms and sausage. Turn the heat to medium and turn it all over for about 5 minutes. Then add the spinach and turn until well mixed. Add the eggs and continue turning until the eggs are congealed. Finally, coat the whole thing with the grated cheese, and cover until the cheese melts.

Serves two very hungry people. If you're not so hungry, it reheats quite well.

Kale, tomato & poached eggs

2 tbsp olive oil
150 g chopped kale
1 or 2 crushed garlic cloves
1 tsp chilli flakes
4 large eggs poached
12 cherry tomatoes, halved
Feta cheese, chopped

Fry the kale, garlic and chili flakes in the oil and cook, stirring occasionally, for 4 minutes or until the kale begins to crisp and wilt to half its size.

At this cooks poach your eggs.

Mix everything together split in 2 and top with eggs.

Really love this, we do it with prawns but you could have it with beans of some kind.

2 tbsp butter or oil
2 garlic cloves, sliced and obviously peeled
1 tsp ground paprika
? tsp dried chilli flakes
Chop 2 spring onions
200 g raw peeled prawns  or drained tin of beans, eg cannellini
8 cherry tomatoes, halved
100 g raw spinach leaves
seasoning
Lemon juice to taste, about half a lemon


Melt the butter over a low heat, add garlic, paprika, chilli flakes and spring onion and cook for a few minutes.
Add the prawns or beans and cook thoroughly.
Add the tomatoes and spinach leaves and cook till spinach incorporated then add seasoning and lemon juice.

Serve between 2.

Looks like a variation of "Joe's Special", a well known dish in San Francisco served for years at Original Joe's. Definitely not vegetarian however  ::)

Vegetarian quesadillas are good and a simple on just on the stove!
Recipe for 2 people
4 medium size flour tortillas
1 onion (diced)
1 tomato (diced)
bag or bundle of leafy greens (kale, spinach, collards, etc- NOT lettuce)
2 avocados (sliced)
1/2-1 lb of cheese (shredded)
1-2 cans black or pinto beans
cooking oil (I prefer safflower oil)

Crisp the tortillas on a skillet with some oil
Put one tortilla on the skillet and sprinkle some cheese on it
Add a layer of greens
Then add beans, onions, tomatoes and a light layer of cheese on top
Add a second tortilla on top of everything
Sprinkle some more cheese on top
Put a cooking top over the whole thing to enclose the tortilla
Let it cook until the cheese is melted and the bottom is slightly browned
Flip it and put the top back on and let it cook until the bottom is slightly browned
Put on a plate and serve with avocado slices on top
